You got good answers on the how. I'll throw in a note of caution. When you say to P2V in your environment, are you talking about doing it on servers you have that are running VMs already? If so, i would strongly advise against it. You have a failed business that is already embroiled in a legal fight with the rent. You have to make realy sure you are allowed to move the data. And if you do, use new servers at your end.

If more litigation comes out of this, the ediscovery process will likely take the shotgun approach and could seize the hardware those VMs run on. You need to be ready to just turn that hardware over.

At worse, the servers are gone. At best, the entore content of the disks will be duplicated. Including your data.
